You will learn how to make the dough for a typical fresh pasta. At the end of the class you will try the fresh pasta you made for lunch or dinner while tasting some of our local wine.

Piadina Romagnola Class

A class entirely dedicated to the hand made Piadina Romagnola from the “cibo dei romagnoli” as Giovanni Pascoli described it as one of the most popular contemporary street food. I will unveil all the secret to prepare a proper Piadina Romagnola and not only that. The class will also examine the traditional flours and the most recent alternative such as spelt, “senatore cappelli” (italian Kamut), yeast and various stuffing. At the end of the class you will taste all the prepared food.

Would you like to learn how to cook a fantastic 3 courses menù from Romagna? This is the perfect class for you! I will explain and show all the steps and each ingredient unveiling all the secrets. At the end of the class you will taste all the prepared food. Our food smiles, just like us! And our guests smile too when they taste our wonderful “romagnoli dishes”. Cooking class of 3 recipes from Romagna (started, fresh pasta main course, and dessert). To be followed by lunch/dinner with the prepared food. The menu: Biscottini al Parmigiano, Cappelletti al ragù, Tenerina al cioccolato.

Il Cappelletto, King of the Romagnola Kitchen

Would you like to learn how to make an hand made pasta dish? This is the perfect class for you! I will explain all the steps and ingredients unveiling all the secrets of the technique used to fold the cappelletti in the “romagna way”. The cappelletti represents for the Romagna region the most noble and “rich” dish representative of an historic traditional wellness. In fact saying “Best wishes and cappelletti on the table all year round” was one of the most appreciated wishes at new years eve. After the class you will of course taste the final products. Kitchen class on a fresh pasta recipe to be followed by a 2 course menù based on the dish we will learn to make plus a dessert.
